Some botanical notes
Originally from Mexico, vanilla is a vine that clings to a tree to grow. Each flower must be pollinated, one by one and manually, which requires daily observation by the grower, as vanilla flowers for only one day over a period of about two months. The flower opens at sunrise and lives for only a few hours. The work of the "marieuses" (pollinators) starts very early in the morning and must be done quickly and with great dexterity, as there are thousands of flowers to pollinate each day.
Madagascar has become the world's leading producer of vanilla.
A bit of history…
The Aztec name for vanilla, "tlilxochitl," means "black pod." The first mention of vanilla is found in the Chronicles of the Aztec ruler Itzcoatl (1427-1440). The Aztecs and Mayans indeed knew how to preserve the aroma of this spice and had been using it for centuries, among other things, in cocoa drinks to soften their bitterness.
Pre-Columbian peoples also used vanilla as a diuretic and depurative, and attributed aphrodisiac and healing virtues to it.
A century later, in 1518, the conquistador Hernan Cortes brought the first Mexican vanilla plants to Europe.
Unfortunately, for over two centuries, various attempts to produce vanilla failed because only the Melipona bee, specific to Mexico, ensured the pollination essential for fruit formation. In 1836, the Belgian botanist Charles Morren discovered artificial pollination of the orchid. A few years later, in 1841, Edmond Albius, a 12-year-old slave from Bourbon, succeeded in figuring out, on his own, how to manually pollinate each vanilla flower, thus substituting for the Melipona bee.
A major discovery, still used today, which allowed the cultivation of vanilla to develop on Reunion Island and then in Madagascar.
