Peppermint (Mentha x piperita) is one of the most universally known and appreciated aromas in the world. A natural hybrid between watermint and spearmint, it is distinguished by its high menthol content, which gives it its characteristic freshness and immediate cooling power.
Botanical overview
Mentha x piperita is a perennial plant of the Lamiaceae family. It is sterile (a hybrid) and reproduces only via runners. It forms dense carpets of upright stems bearing deep green, slightly serrated, and highly aromatic oval leaves. The pink to purplish flowers, grouped in terminal spikes, appear in summer. The plant is very invasive and is easily grown in any European garden.
The leaves contain an essential oil rich in menthol (30 to 55%), menthone, menthyl acetate, and menthofuran. They also contain flavonoids (eriocitrin, luteolin), phenolic acids (rosmarinic acid), and tannins.
Aromatic and flavor profile
Peppermint infusion presents a slightly greenish to pale yellow, clear and limpid liquor. Its aroma is powerful, fresh, and minty, and immediately recognizable. On the palate, the sensation of freshness is pronounced and persistent, with a slight bitterness at the back of the throat. It is a highly aromatic herbal tea, ideal for a refreshing break.
How to prepare the infusion
- Quantity: 1 to 2 teaspoons of dried leaves (approx. 1.5 to 2 g) per cup
- Water: simmering, approximately 90°C (do not boil to preserve the menthol)
- Steeping: 5 to 8 minutes, covered
- Filter and enjoy warm or cold (excellent as an iced infusion)
- Frequency: 2 to 3 cups per day

FAQ
Is Herberry's organic peppermint certified?
Yes, these peppermint leaves are certified organic, free from pesticides or synthetic chemical inputs.
What is the difference between peppermint and spearmint in herbal tea?
Peppermint (Mentha x piperita) is much richer in menthol than spearmint (Mentha spicata), which gives it a much more intense freshness. Spearmint is milder, sweeter, and less pungent. For those sensitive to menthol, spearmint is often preferable.
Can peppermint be used in cooking?
Absolutely. Dried peppermint leaves can be used in cooking for fruit salads, desserts, sauces, or drinks. They can also be used to flavor water or to prepare non-alcoholic mojitos.
How should I store my bag of peppermint?
Keep away from direct light, heat, and moisture. Menthol is very volatile: close the bag tightly after each use. Consume preferably within 12 months.
