Ginkgo (Ginkgo biloba) is one of the oldest trees on the planet, often described as a "living fossil" because it has remained virtually unchanged for over 200 million years. Its fan-shaped leaves, bright green in spring and golden yellow in autumn, have been used in herbal medicine for centuries in traditional Chinese and Japanese medicine. Botanical presentation

Ginkgo biloba is the only living representative of the Ginkgoaceae family and the order Ginkgoales. It is a large dioecious tree that can live for several millennia and reach 30 to 40 meters in height. Its characteristic two-lobed fan-shaped leaves (hence the name biloba) are deciduous and bright green. The tree is widely cultivated in Europe as an ornamental tree and for its medicinal uses.

The leaves contain specific glycosylated flavonoids (ginkgoflavonols: quercetin, kaempferol, isorhamnetin), terpene lactones (ginkgolides A, B, C, J and bilobalide), proanthocyanidins, and organic acids. Standardized ginkgo extracts (EGb 761) have been the subject of the majority of clinical research.

Aromatic and flavor profile

Infusing ginkgo leaves produces a lightly golden to greenish liquor. Its taste is herbaceous and slightly bitter, with a subtle astringency. The aroma is mild and slightly woody. It is a subtle herbal tea, without very marked notes, which is enjoyed when combined with more aromatic plants like mint or verbena.

How to prepare the infusion

  • Quantity: 1 teaspoon of dried leaves (approx. 1 to 1.5 g) per cup
  • Water: simmering, approximately 90°C
  • Steep: 8 to 10 minutes, covered
  • Strain and enjoy warm
  • Frequency: 1 to 2 cups per day
