Peppermint (Mentha x piperita) is one of the most universally known and appreciated flavors in the world. A natural hybrid between watermint and spearmint, it is distinguished by its high menthol content, which gives it its characteristic freshness and immediate cooling power. Botanical presentation

Mentha x piperita is a perennial plant of the Lamiaceae family. It is sterile (a hybrid) and reproduces solely via stolons. It forms dense mats of erect stems bearing oval, deep green leaves that are slightly serrated and highly aromatic. Pink to purplish flowers, grouped in terminal spikes, appear in summer. The plant is highly invasive and is easily grown in gardens throughout Europe.

The leaves contain an essential oil rich in menthol (30 to 55%), menthone, menthyl acetate, and menthofuran. They also contain flavonoids (eriocitrin, luteolin), phenolic acids (rosmarinic acid), and tannins.

Aromatic and taste profile

Peppermint infusion presents a clear, limpid liquor ranging from slightly greenish to pale yellow. Its aroma is powerful, fresh, and mentholated, and instantly recognizable. On the palate, the sensation of freshness is pronounced and persistent, with a slight bitterness at the back of the throat. How to prepare the infusion

  • Quantity: 1 to 2 teaspoons of dried leaves (about 1.5 to 2 g) per cup
  • Water: simmering, about 90°C (do not boil, to preserve the menthol)
  • Infusion: 5 to 8 minutes, covered
  • Strain and enjoy warm or cold (excellent as an iced infusion)
  • Frequency: 2 to 3 cups per day
