L-Carnosine is a natural dipeptide formed by the binding of two amino acids: beta-alanine and L-histidine. It is naturally present in high concentrations in skeletal muscle (20 mmol/kg of dry muscle) and in the brain. Its concentration decreases with age. Research describes several biochemical properties of L-Carnosine: the ability to neutralize certain free radicals in vitro, the ability to bind to reducing sugars and carbonyl groups, and a role as a muscle pH buffer by neutralizing H+ ions produced during intense effort. Glycation (or the Maillard reaction in vivo) is the process by which reducing sugars (glucose, fructose) bind non-enzymatically to proteins, DNA, and lipids. In vitro studies show that L-Carnosine binds preferentially to reducing sugars and reactive carbonyl groups, which puts it in competition with proteins in the glycation reaction.
